There are many different kinds of methods used for converting a color image into black and white. The one thing that I try to tell people is to never use the B&W mode on your camera. You can always
convert a color image to black and white, but if your camera does it for you, you'll never be able to get the color back! There is one exception however, pointed out by macroman, that if you're shooting on RAW mode with B&W turned on, you still keep a RAW file with full color while simultaneously writing a B&W jpeg.
