DVR's work by using a hard drive to store programming that it receives and features an on screen guide to operate it's features. For live programming, programming is received by the unit and written to the hard drive. Programming that you see is being read from the hard drive the moment it's stored. During live programming when you use the pause or other features, storage of programming continues for up to 30 mintues while it's the playback from the stored programming that is manupulated using the remote.
