For both POP3 (incoming) and SMTP (outgoing) the address is mail.speakeasy.net.

Speakeasy does allow you to run your own inbound and outbound mail server on all residential and business accounts.

They do periodically scan port 25 to check for open mail relays, so you may see these tests appear in your logs.
