IF you have the money, I've found that the Network Monitor from Microsoft's SMS suite works quite well. I've got it installed on a laptop which, along with a small hub, provides a very portable and useful sniffer.
Of course, since I have a Developer Network subscription through work, it is effectively free to me. Not everyone is in the same position.
