You cannot discriminate against someone because of race if their race is specifically protected in the Civil Rights Act. There are several races that can be discriminated against at will. You can certainly discriminate based on belief. No court would force someone to hire a Satan worshipper. Some states have laws protecting against discrimination based on sexual orientation and some don't. Theoretically you are correct about discrimination based on age, but it happens every day.
