Media Center PC's

Media Center PC's are the magic word. Depending on how much you want to spend on them you can build one for $500 (single tuner TV card, analog only) to $2000 (the works, double tuner digital card, mucho drivespace, dvd burner)

And you have full control over what you record. Remotes can be bought for $50.

can you point me in the direction of a good $50 remote? I am currently using a wireless mouse and keyboard (the second I have purchased)-- they don't seem to be able to make one that can work with a range of more than 6-7'

For less that $2000, I put together a Media Center PC that does everything you could want to do with a TV show (record, edit commercials, burn to DVD/divX/MPEG). It also plays all my PC games on my TV.
