Michieru2 : Skype does not offer flexibility and can be considered as consumer grade VOIP. SIP is more complex and can be expanded using a PBX box creating a entire phone network for your enterprise or small business without the need to get multiple lines for each phone.

On top of that I use Gizmo project which uses the jabber protocol for communication and I am able to cross talk between networks within the VOIP client. Livejournal has also done this and I have no problem contacting between networks.

I am aware that Skype has it's own devices and I have installed such devices for customers who asked, but I rather have SIP over Skype over the quality, the standard, and the flexibility.
