I have my name servers hosted in one place, and my website in another. Just make sure the 'new' name servers are set up to your liking before you go to your domain registrar and make the switch.

By way of example, this is what a MX record looks like...

domain.com. 14400 IN MX 5 mailserver.domain.com.

So if that record exists on your old server, just make sure it is over on the new server before you switch and your users will never know the difference!
