If you set up the NEW name servers with the same data as the old ones, there will be no problems when you switch. By way of example, this is what a MX record looks like...

domain.com. 14400 IN MX 5 mailserver.domain.com.

So if that record exists on your old server, just make sure it is over on the new server before you switch and your users will never know the difference!
