Re: Essential Apps I don't care for Thunderbird myself, too buggy still. It didn't even integrate with the OS X address book last I checked. I like, and use, Mail.app.
From my Applications, the first apps I would install (not in any order):

Amadeus Pro (audio editing)
AppFresh (software update tracking)
Firefox (or BonEcho)
iGTD (time management)
Notebook (info mgmt, notes, etc.)
PDFLab (pdf mgmt)
Shadowkiller
Text Wrangler (lightweight text editing)
SmallImage2 (image resizing)
Vienna (RSS reader)
PathFinder (finder replacement)
Coda (html editor/coding tool)
Quicksilver and Growl as already mentioned.
