2 cups shredded sharp cheddar cheese
2 cups chopped red onion (1 medium-large)
1 cup mayonnaise
1 package precooked bacon finely chopped
1 tsp. crushed red pepper

Bake at 350F for 45 min.

Serve with bread chunks or tortilla chips.

That said, here's my lunch from today (Super Bowl Sunday). I figured I'm about to stuff myself with crap, I should probably eat some greens before hand...

Some beautiful food going on here...

Made chicken today in my trusty vintage RevereWare pot.

Ginormous frozen boneless chicken breasts (about 6x4x1") chopped up in big chunks and cooked up in a spicy sauce with loads of various chillies, garlic and stuff.

I threw in a lonely looking beef smoked sausage I'd found in the freezer too just to save on cooking. Plus, it added a nice smoky flavor.

Brought to a boil for a couple minutes, then put on lowest flame and covered it to slow-cook.




No knife needed here, it's spatula tender.




Left the smallest bits of the chicken in the pot and added back some water along with gorgeous frozen Asian veggies. Yes, that is a Shittake Mushroom you see there.




When it came to a boil again, I added in Jasmine rice and let 'er rip.




So, now i have the chicken for pasta, burritos, sandwiches or whatever, plus some lovely chicken/veggie rice.

is everybody sitting down??

I actually cooked yesterday.... cooked dinner for my elderly friend (my ex-brother-in-law) Monday... a Cooks butt bone in ham, sweet potatoes, and green beans. I purposely let a little bit of the "fringe" get crispy, while the rest of the ham was nice and moist.

If you look closely, you can see the steam rising off of this incredibly tasty feast.

Here something I did with that chicken.... Brekky!

Toasted a slice of a S.F. Sourdough loaf with cheddar/jalapeños/onions, then cooked two eggs sprinkled with garlic pepper, seasoning salt and chile de arbol powder. After turning, on top of the eggs I added the chicken, a herb blend, more cayenne and garlic pepper w/ some American cheese. Then turned off the burner and covered for meltyness.

On the waiting onion/jalapeno cheese toast it went. NommyNoms!




Is this gorgeous or what?

with apologies for actually posting this about 12 hours late....

First up, something enjoyable to drink while we had our car club "bored" meeting.... a Margarita!

For my dinner, I had the Jack salmon with mashed potatoes and roasted vegetables... pretty good, I really enjoy trying to ease my current dinner salmon desires; at TGI Friday's in Moline, Illinois.
