fine with 5Mbps

I have 5Mbps with Charter and I think I passed the test. It said that it was checking bandwidth availability, and then just loaded a video. Never said anything about not having enough bandwidth.

They are probably stating 7.5mbps taking into consideration that:

A) many connections have speeds a lot slower than the advertised

B) most people are only aware of their advertised speed for their connection

So the 7.5mbps recommendation is just adding some headroom just in case.

Or it may be to incite people to subscribe to faster connections...

As for me I have both a 6mbps DSL connection (speed tested to 5.2mbps) and 10mbps cable connection (speed tested to an average 8mbps) and the site says both my connections are not fast enough.

Working fine nice and speedy on the 6mbps DSL though I have not tried the 1080p only the 720p. My monitor is only 1280x1024 so there's no use in doing 1080p.
