Just get a stand alone DVD burner. This is what I did 4 years ago to replace my VCR.
I read below, but the answer is not clear to me. Do you need to have the FIOS DVR capability or can you just connect a DVD burner to the TV and record shows? I have a stand-alone burner, but not the DVR capability feture from VZ. I want to record sporting events, for instance.
Just connect the DVD burner inputs to the Svideo/composite and stereo rca jacks on the back of the FIOS STB.
You would just have to record in real time since you aren't using a DVR. this is how I have my HDTiVos connected. I'm not positive about the FIOS HD STB since I've only used the HDMi output on mine, but on the HDTiVos those outputs are active when the HDMi out is active.

OK did that and it works! A few small issues. I have the Samsung DVD/VCR combo recorder. S-video from the Fios DVR to the Samsung for video, red/white rca for audio.

Samsung is running HDMI out to a monoprice HDMI 5 port switch, then switch is running to 1 of 2 HDMI in ports on my Sharp aquos 46" TV (the Fios DVR is connected directly to the TV using the 1 other HDMI port).

Issues:
• when watching some channels on the Samsung there is some flickering / a line across the very top of the screen (like only a few pixels high, a white line). Again only on some channels like Fox Soccer Channel
• the line / flickering shows up if I play shows that were recorded on the DVR but only on the same channels (FSC, etc.)
• most other channels look about the same as viewed directly with the Fios DVR
• so far the samsung records Verbatim discs fine, both DVD+R and +RW, but would not record using Memorex, errored at 10% initializing every time, tested with several discs
• I can record HD content onto DVDs, but it is obviously being downconverted going through the Samsung. Like I recorded the Spurs v. Blazers game that was on TNT HD & it worked, but the black bars / letterbox effect was on the top & bottom - overall it did not look terrible though
• I also had to bypass my monoprice HDMI switch and plug the Samsung directly into the TV to be able to see some DVDs and to record onto a DVD+RW, other times I can leave it plugged into the monoprice switch the record DVD+R (maybe SD vs HD channels?)
