Because the light is generated by plasma, the colour is dependent of the emission bands of the gas atoms.
<nerdy stuff> For example, the electrical sparks in air have the blue tint because of the 428 nm emission line of the nitrogen (blue-violet) and the 460 nm emission line of the oxygen (blue). To obtain different spark colours you'll have to replace the nitrogen and oxygen with other gases e.g. containing sodium for yellow (589 nm emission line - kinda' hard to make at home). </nerdy stuff> -- Keep It Safe, Stupid!
