If the server where your email is hosted allows for a www-browser view (let's call it webmail) that would be the simplest approach. No vpn required.

If not, you would make the vpn connection, then you could run a remote desktop app on your home pc and the remote pc, (like Radmin) and "take over" your home pc's desktop. Then launch Outlook.
