Instead of a single brief pulse of light, these modes force your flash to emit many bursts of light per second and create a longer pulse of light. This longer pulse allows for the proper exposure across the entire sensor, rather than just a portion. I use this mode frequently for wildlife photography and it's always enabled on my flash. The biggest downsides are reduced range and battery life due to the extra light your flash must emit.

It will properly expose the entire frame at 1/2000, so I suspect it uses a blade shutter, rather than a curtain pair like his demo. Sync speed is not one of the items in the specification list, either.
