Freezer Jam

Fun to look at these pics - my sister and her daughter picked some yesterday, so I got to eat some myself after these pictures made my mouth water!

We like strawberry freezer jam:
STRAWBERRY JAM (FREEZER METHOD)

1 qt. or 2 pt. fresh strawberries
4 c. sugar
1 box Sure-Gel fruit pectin
3/4 c. water
Wash strawberries and remove stems, thinly slice (use a large bowl); sprinkle
sugar over strawberries and set aside for 10 minutes, stirring occasionally.Mix water and Sure-Gel in saucepan. Bring to boil over high heat, stirring
constantly. Continue boiling and stirring for 1 minute. Stir Sure-Gel
mixture into strawberries. Stir constantly for 3 minutes. Fill jars within
1/2 inch of top of jar. Wipe off top edges of jar. Quickly cover; let
stand at room temperature 24 hours. Then place in freezer. Refrigerate
after opening.

The recipe is in packages of Sure-Gel. Tastes more like fresh fruit than cooked jam - just not quite as thick. Makes a great snack on bread and butter (provided you can eat bread.)

Easy way to freeze some is to rinse them, let them dry then put on cookie sheet in freezer. After frozen, remove to zip lock bags. Mom says I don't need to rinse them first if I remember to rinse them when I thaw them, but I like the idea of rinsing first.

I think this is what we're going to do with some of them. Unfortunately, I don't know if I have enough room in my freezer for the cookie sheet. (It's pretty packed right now.)

Strawnana Bread sounds yummy!

I know what you mean about the freezer! Mine's a scary place sometimes!

That recipe sounds tasty and nourishing and, important for me-would lend itself to being made with gluten-free flour.

Good luck and I hope this becomes a fun family tradition for you as it has for my family.

I made the Strawnana Bread last night and it came out great.

9.2mm 1/30th F3.2 ISO100



My modified recipe:

4 eggs, lightly beaten
1/4 cup honey
1 1/4 cup packed brown sugar
1 cup strawberries, mashed
1/2 cup strawberries, chopped
1 cup mashed bananas
1 tsp vanilla
1/2 cup vegetable oil
1/2 cup apple sauce
3 cups flour
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp salt

1. Preheat oven to 350 degrees. Grease 2 9x15 inch pans.
2. In a medium bowl, combine the flour, baking soda, cinnamon and salt.
3. In a large bowl, combine remaining ingredients. Beat with an electric mixer at medium speed for 2 minutes. Add flour mixture and stir just until moistened.
4. Pour pans and bake for 1 hour or until loaves are done.
