I don't understand why it really matters. Do the press need to view Amnesty Internationals site while they are in China? No. The press can write anything they want, that is a big step, and that is what really matters.
I am guessing if the rest of the country can't view amnestyinternational.com, then it's not that easy to "flip a switch" to let 1000 journalists view it.
Get the priorities straight.

China is hosting the Olympics and is going to have the spot light on them. China has had a history of issues when it comes to human rights, freedoms, etc. China is going to have all sorts of protests going on during the Olympics. Only about a bajillion reporters will be in China.

Sounds like a perfect recipe for journalism to happen. More news will happen then just what the government censors allow through. That's the whole point of the unfiltered internet access.

That...plus one of the conditions that the IOC had originally places on granting China the 08 Olympics is that they wouldn't do exactly what they are doing. But the IOC, being the spineless, ball-less cowards that they are are now back peddling saying that they only meant free access to the Olympic sports related sites.
