You can easily build a highly functional gaming system with most of those peripherals for way less than 3k. You only need a 1.2kw PSU if you're going to be running 2+ GTX 280s.

You don't even need a 1.2kw PSU to run two GTX 280's, a 800w from a quality manufacturer would be just fine.

Then sell your current 7800 to pretty much make up the difference, and you're back to only spending $40. But doing that you'll end up with a much better graphics cards than 7800 SLI. Of course that is dependent on you being able to come up with the extra funds. You can usually find the 8800GT ~$100 A/R so if you can manage like $130 up front, it would be ok.
