Apple and ATT have intentionally blocked certain trafffic from going over 3g (e.g. films from the iTunes store, etc) and pushed people towards wifi. It doesn't seem surprising to me that a huge percentage of the traffic is over wifi.
Moreover, once connected to wifi, everything goes over wifi.
