I'd recommend Texas over Arizona. I'm here in NM for nearly 5 years now and have had about enough. In fact, wife and I were talking just yesterday about moving back "home". Arizona and New Mexico are pretty similar in a lot of respects and there's a lot to be desired in both, IMHO...
I'm from Houston, born and raised, and therefore I'm probably somewhat biased in its favor, but I'll try to be objective none the less.
Some positives for Houston:
Relatively low cost of living, particularly housing, compared to most large Metro areas.
Abundance of employment opportunities in many fields.
Native Houstonians are generally really friendly and helpful.
Cosmopolitan. Residents there from all over the globe.
Close to beaches to the South and piney woods and lakes to the North.
Some negatives (my biggest peeves):
Climate sucks! Way to hot & humid... The older ya get, the worse it feels.
Sprawl... The Houston Metro area is huge. Frequently leaves newcomers or the unfamiliar lost and confused.
Flat, featureless terrain isn't very appealing, although the Spring and Summer greenery is pleasant.
Rush hour traffic...
Hurricane season, although actual strikes in the area are not really that often.
I only mentioned Houston here 'cause I know you wouldn't be interested in that other place they call Dallas...
Edited to add: Austin is a cool city but it has become way to busy and crowded for my liking. Beautiful hill country environment and tolerable climate though. -- Terry
