Make sure your Xbox 360 is set on a static IP (via the router) and open ports 88 (UDP) and 3074 (UDP/TCP). How you do this varies with the brand of router you are using. This should resolve XBL chat issues and improve your connection to other players.

Granted, it's better to forward specific ports on a PC, but I don't think it'll make a difference on a Xbox. I do it more out of habit than anything else.
