Is there a mechanism that prevents a user from responding to a poll more than once?

Asked another way, is it possible for the results to be skewed by a *ahem* zealous respondent?

When I tried that once (by accident - I had forgotten that I already voted), it reminded me that I had already voted and did not accept the second vote.

I've never tried voting as an anonymous user, so I don't know what happens in that case.

No. Multiple choice polls, of course do allow for more than one vote

What nwrickert See Profile said above - once you've voted, it will not permit you to vote again.

Also anon votes are not counted in polls, and you must be at least a level 2 registered member to create a poll.

Would it be more simple or more difficult to permit a member to vote again but have the system accept only the most recent vote--as a form of 'edit' (for those rare occasions when one changes one's mind )?

To implement that, the site would have to keep a record of how everybody voted. Most people won't like the privacy implications of that.

(I'm not convinced there's any more of a "privacy factor" involved with voting in a poll here than with the usual thread posting, but to each his/her own.)

Obviously we don't know. However, keeping such records requires more complex programming, so it is unlikely.

True. Depending on the method used now, it could be either really easy or somewhat involved to add such a feature... but, that's the fun of programming--adding useful features (not that I'm saying such a feature would be all that useful, beyond giving some coder something potentially fun to do ).
