Wouldn't the capacity be determined by how much water you use?
I don't know, I know nothing about them but that would seem logical to me.

That's part of it. There's also a softening capacity. For example if you look on Home Depot's site you'll 18,000 grain, 30,000 grain and 40,000 grain.
