My suggestions

Make separate backups of each partition using something like TI2009 or TI11
Restore the backups to one of the drives
Create a raid array with the second and first drive

Note: I don’t currently use raid.

A power supply failure can kill both raid 1 drives and raid 1 cuts your disk space in half.

If either raid 0 drive fails you loose everything and raid 0 doesn’t perform much better on most applications.

Raid 5 and up are out of my price range.

Instead I use backup software (Acronis TI11 or 2009) and store the backups on at least 2 PCs.
