I have a feeling that the feed from FIOS is not 1080i but 720p and no matter what I do it cannot fixed
I'm not sure what the problem is but Vz does not do further compression on whatever they get from the original content providers. Channels like HDNet, Universal HD, etc are definitely being sent to you in 1080i.

How do you have your set top boxes connected to your TV precisely? Component? HDMI? Something else?

Which set top boxes do you have? (model numbers are important). You may need to go into Menu / Video Settings / Video Format and make sure everything is set up correctly there as well. (Also take a look at Menu / Video Settings / SD Override and try OFF initially)

You may need to adjust your settings on your TV. What brand/model is it?

I have a Sony Bravia LCD HDTV connected HDMI to the HD STB. When I power on the Sony, it briefly shows me a display that includes the signal it is receiving. It says 1080i.

My HD picture quality is stunning on HD channels. Since IMG 1.6.2 was released, even SD signals are vastly improved.

Time to check all your settings as darcilicious detailed.
