If I run my own cable to the ONT and connect it, is there anything else I have to do, such as calling VZ and asking them to changeover the internet, and furthermore, if this happens, what, if any, downtime can I expect?
Yes you have to call or post to the direct forum. My understanding is that the downtime is minimal...
