Re: [OS X] Itunes...adding to library I'm not sure what you mean by the first question. If you add tracks to your music library they should automatically show up in "music."
As for your second question, there are two ways that iTunes manages music, one of which which involves iTunes copying your files to the Music/iTunes folder for you and keeping the "original" in tact. This can be found under Preferences > Advanced > "Copy files to iTunes Music folder when adding to library." Personally, I leave this turned off for iTunes, but the analogous option turned on for iPhoto. With it off, you need to be sure that you keep your music in one relatively centralized location so you can back it up easily and such.
