Apple probably can't get 3.1 out fast enough. 3.0 is gold for hackers. You can enable tethering by just browsing to a website, jailbreak is easy, and even the baseband is unlockable!

but in general, my upgrades have gone very fast (a few minutes, perhaps).. Someone will always complain of a brick after any upgrade, but i think the incidence is low.. AFAIK iTunes always does a backup before it applies an update/upgrade..
