Re: Shutting of my iPhone Yes it will work and I would recommend leaving in the unactivated sim just so you don't keep getting reminders that there is no sim.
Also if you do upgrade it via Itunes after you have deactivated the line with ATT just use PwnageTool or any of the activators to reactivate it so you can use the new features and not get stuck up with it asking to activate the phone.
The trick is that you just need to jailbreak it from there on out if you are going to keep upgrading the phone while it is off of ATT service. That's why you want to keep the sim card around and why you want to use the Pwnage Tool to do it. I used my iphone as an ipod touch for awhile and that is what I did to make sure I could use it with out being on ATT.
