For example, I am trying to figure out what the highest wireless encryption levels iPod Touch and iPhone, MacBook Pro, etc. can use.

 The WiFi alliance have a logo program, though IMHO it is somewhat worthless because not all manufactures opt for the program, and the ones that do may not opt for full certification.

The results return the products certification sheet which may list the level of encryption that is supported.
