The 7200.10 is currently the main drive in the system and is about two years old. I've been reading reviews that show that the 7200.12 is a bit faster than the 7200.10.... but is it really that big of a difference? Which drive should I use as my primary? My current primary drive is the 7200.10.

Definitely go with the 7200.12. I see over 130MB/sec. maximum and ~108MB/sec. average speeds (non-RAID) using the 7200.12 ST31000528AS 1TB HDD. That's nearly twice as fast as your 750GB 7200.10.
Next you want to do a test on the 7200.12 and make a comparison with the test from the 7200.10. Just testing one and not the other won't help in deciding which to use for best performance.
This is my new drive. I didn't think it would be a far test because my current drive only has 12% free on it and figured that might slow down the speed test. Either way, this is the result from the new drive.
The 7200.12 is much faster. You'd definitely benefit by using that as your system drive. BTW, the fact that one drive is almost full has no impact on linear read tests.
