don't like what a customer says about your network - sue their @ss!
Huge difference between not liking what they say and the "customer" leading an effort to taking the network down.

But that begs the question: how COULD the customers take it down unless the owners had oversold the thing to begin with? If everyone who paid for service to the network decided to actually use that service at the same time and the network fails, I have to blame the owners and not the folks who chose to use what they paid for.

I have no doubt that they do. I'm just suggesting that they need to take responsibility for that when it bites them in the ass.
