I second this option. I made "Thanksgiving" for mine and my fiancee families the two weekends before Thanksgiving since I would be out of town for Thanksgiving. I got so many complements on the turkey. Not to toot my own horn but it was the best turkey I have ever had, thank you Alton. Even though Alton is a food dork and sometimes has retarded skits, the man knows his stuff. The turkey I had to eat for Thanksgiving was breast only, in a bag, and cooked by time. It was dry and tasteless. Can't wait to get home to cook third Alton turkey.
Edit: I cook in a builder grade electric oven, no convection, works just fine.
