I have a question though ...

Those UCS servers, are they running *all* voice functions? Like call routing, media gateway, etc? Can you explain that in a little more detail?

I am figuring that since they run ESXi there must be a few virtualised machines running on there for different purposes.

With Cisco IPT, you can not run media gateways within server hardware, you use Cisco ISR routers (such as the 3945E and the 2951 ISR G2's that are pictured above) to take care of the PSTN connections and all of the transcoding.

I am running 2 VM images in each one of th UCS boxes - 2x Unified Communication Managers (aka CallManager) and 2x Unity Connection Voicemail servers.

It's a pretty vanilla setup so those two are the only services that we need. More advanced Cisco IPT installations can also run VM images of Cisco Emergency Responder, Cisco Unified Presence, Cisco WebEx, Intercompany Media Engine, etc...
