Can't Sync Or Backup 3GS on Itunes Mac

Yesterday I upgraded my iPhone 3GS from 4.1.2 to 5.0.1 and jailbroke and unlocked it and once all was up and running ok I connected to itunes to restore all my contacts and other stuff and the phone kept rebooting in the middle of the restore. Thinking something went wrong with the upgrade/JB/unlock, I re-did everything from scratch and the same thing happened again. Just for the hell of it I connected it to my Windows 7 laptop and tried the restore from there since I backed it up to both computers and it went through perfectly. Once I connected to my Mac again to try to sync, it keeps crashing and I have got all of the following errors:

iTunes could not back up iPhone because the backup could not be saved on the computer
iTunes could not back up the iPhone because a session could not be started
iTunes could not restore this iPhone because the backup session failed

If I disable syncing apps, movies, books and anything else it will sync contacts ok but as soon as I try to sync anything else the phone disconnects and I get one of the messages above.

I am a pretty advanced user and never usually have problems with any of my computers but I thought this was supposed to work the other way where the Mac just works and the PC usually acts screwy. I have been googling and trying everything. I deleted all backups and deleted the lockdown folder contents, created a new account and tried from it and it keeps crashing. Kinda like IE with Windows, it seems that iTunes is part of Mac and not meant to be deleted. It can be done but manually but I'm not sure it will remove all files associated with it in case something is corrupt.

Short of wiping the entire Mac and starting over again, does anyone have any ideas or know a way to wipe and reload iTunes on the Mac? I'll use my laptop if I have to for iTunes with the phone but it will be annoying because my library is on the Mac so I would have to start copying things over to get them back into the iphone. I could always SSH stuff right into the phone too but I'm gonna be annoyed until I figure this out and just want my iTunes to work. Any info is appreciated.

By any chance are you using a beta of iTunes on the mac??
