Blue = iMessage. The messages are sent using Apple's messaging service as data over the internet. Doesn't count as a "SMS Message"
Green = Text/SMS Message. Counts against your provider's Messaging plan. Sent using normal SMS via your carrier.
If the person your texting also has an iPhone/iPod/iPad running iOS 5, it should automatically switch to iMessage. -- University of Southern California - Fight On!
