Batch strip audio / subtitles from *.mkv

I've googled the heck out of my question and I can't come up with a proper answer that works.

I have many directories of foreign .mkv files in a folder

I want to remove all languages except one

I want to remove all subtitles

I don't want to click and adjust every single one as there's a lot, and I don't want to batch remux stripped files manually, so I need a batch solution to simply remove this.

Does it exist?

There's piles of people asking the same elsewhere and I see command line suggestions, perl suggestions, but they all fail and I see suggestions at little applets that don't do what people are asking for.

If anyone can make a recommendation based on personal experience and can interact with me if that recommendation doesn't work as suggested, I'd appreciate it. Thanks in advance!
