I agree with Kingdome that for money your gathering skills are super easy to make money with (don't forget herb, on my server herbs sell much better than ore) and even if you don't money is still not much of a problem. If you play your 85's at all do the Fireland dalies and you can make about 200G a day easy.

Sounds like you have enough experience on classes to pick already. In my experience highest/easiest to play DPS is normally hunters, best tanks I really don't know I think I heard Bear Tanks are doing really well now, Healer I will always be a Shaman Healer.

Profs I start with is skin/mining. You should easily be able to make a ton more gold than you can spend. What I do around level 60 (once I can fly) is drop either skin or mining (usually skinning) and pick up a production skill. It's easier to gather the mats for production when you can fly and by 60 you should be able to afford to switch to a production skill.

I was in the same boat as you. Played for two weeks after Cata launch, reached 85, then quit. I recently made a come-back about a month ago, and have been enjoying the game immensely. I have never been a fan of playing multiple toons and have spent all my time, from vanilla and on, playing my paladin. I have just one other character - a frost mage - who is 81 and I am still learning him (SoR).

If I were you, I'd get your main maxed out on JP and VP before you think about re-rolling. That way you have a fall back. Now that my paladin is well-geared and ready for MoP, I am engaging in my mage full-heartily and considering making him my main and focusing on being a DPS guy for MoP.

In terms of the class, that will depend on you, since you already have the other plate tank/dps classes, you could always try a paladin in order to see how all three play out. If you want something completely different, you will just have to figure what you plan to do.

Gold is much easier to come by, they plan on removing the limit of daily quests you can complete each day, so you can make gold that way fairly easily. Professions are still a great way to make gold if you are on a decent server. Dead servers will be much more difficult.

I hear you about leveling up the secondary skills. The turkey day world event is a great time to power level your cooking, very easy to get to 300 there. For fishing, you can just stay in SW or IF all day and fish, though I would recommend a mod called fishing buddy for double click casting to speed things up. First aid is just a grind, but depending on the class you roll and what you plan to do at end-game, you may not even need to level it except for completion's sake.

I can't say much on the dps number as I haven't been on much lately, but using the addon called recount will let you see how you are standing up to the rest of the raid. I would definitely try out the raid finder for casual raiding and to see how things are going. Of course, elitist jerks has a ton of math behind optimal builds and numbers.

To prepare for MoP I would recommend
1) decide and level the class you want to play first
2) choose and level the professions you want to use
3) get all the glyphs for your toon before the patch since they will go higher upon launch
4) watch some videos of beta footage on quest zones and new class mechanics so you aren't completely lost upon starting the next expac (only if you are concerned with leveling to 90 as fast as you can.
5) HAVE FUN
