If you want/need just to remote desktop/vnc you can just connect via SSH (putty) and then use remote desktop/vnc to it. No need to install anything on your server besides having SSH enabled.
I use this all the time, no need to set up VPN for that.. you only need to forward port 22 from your home router to the server and that's it, if you need to move files around you can use WinSCP ( »winscp.net ).
If you need mapping/ access to drives then you are correct and use VPN.
