I am have a lot of connection problems w/ Comcast's Xfinity Internet and the tech said there's a lot of noise through the coax connection from the wall and it's not Comcast's responsibility to fix that. If I switch to U-verse Internet, will it go through the same connection as Xfinity or does it go through my telephone line? I will not be having phone or cable TV service.

If you go with flavor 1 (VDSL) , then it is up to the installer how he wants to install. You however can ask for a specific type of install such as all Cat5 vs reuse of the existing Coax. The installer will test the Coax and at a minimum replace all the connectors using new compression fittings.
If you go flavor 2 (ADSL2/2+), then you will only be using twisted pair or existing house wiring unless you have a professional install. There is no Coax option in this flavor.
Note: both flavors are delivered to the side of your house via copper wire to the NID or iNID and then there are options for for flavor 1 (VDSL). VDSL can reuse existing Coax, existing twisted pair or you might get an all new install using Cat5.
