[General] Using Vitelity to call Mexico, audio very choopy.

I started to use Vitelity to call Mexico and I am finding that the audio is very bad, but when I call localy via Vitelity it sounds just fine.

I only see this issue during the evening. Vitelity states there is no problem. Has anyone else seen this issue? The stats on the audio channel reports 2300 packets received and 7800 packets sent, thats a lot of missing packets coming back to me, and when I do ICMP ping to the Vitelity VoIP gateway I get 0 packet loss.
