How do you propose to use it? Soft phone with a PC? Windows, Mac or Linux. Or soft phone with a smart phone?

In the Windows realm I like the Plantronics Blackwire series, although GN/Jabra, Logitech and Creative all have decent offerings.

I prefer USB headsets that isolate the analog audio from the internals of the PC.

Does the OS make a big difference?

It's purely soft phone and PC.
I am using Windows 7 as of now, but I do have another box running ubuntu for testing purposes.

Actually, yes it can. Some time ago we had some folks from Plantronics appear as guests on a VUC (»vuc.me) call.

They remarked that Windows and Mac OS deal with USB audio devices in different manners. That explains why some of their USB headsets are offered for use on Windows but not Mac and vice versa.
