Now things are running better, smoother especially my downloads.

Not having a "U-verse modem" (there are more than one), I can't say how that could be. But having used four modems (two different makes of ADSL, and two different makes of ADSL2+), and six routers (five different makes), I can't say that disabling SPI in a router makes for smoother downloads.

But I do know that users have complained about problems with the Motorola NVG510 (which I can't use because I don't have U-verse).

No. There should not be a conflict, as with two AVs on a computer. The "U-verse firewall" is on the RG, not on the computer.

Also on the UVerse modem page, how do I check if everything is at the right settings, speeds, ping, noise level, etc?

Speed, ping, noise level are not user configurable settings, they are reports on the status of the connection. You would copy them, and paste them in a post requesting assistance. Or you could just post what you see and ask what it means.
