You do not absolutely have to stick with the same monitor, but you'll have some issues otherwise. If you put in a 1920x1200 in the middle, that would likely to be run at 1920x1080 (at least that was the case with my AMD based card) and it will most likely to run only at 60 Hz as well. If you can live with those restrictions, by all means, get a 120Hz, 1920x1200 monitor.

Personally, I have a 27" 1920x1200 monitor in the middle with two 19" 1280x1024 monitors on each side in portrait mode. The 19" monitors run at 1024x1200. The height of the displays are roughly equal, so my 3 monitor setup actually looks OK.
