Does she use Remote Desktop Connection on the PC to connect to her work PC or some sort of VPN software?

Most VPN software will allow you to still communicate with your local LAN when connected, so there may not be any reason to add a second NIC or use WiFi or anything like that.

If the PC has both WiFi and ethernet, that would be the easiest (assuming the VPN software is extremely restrictive).

Not too familiar with it, but it does not look like it sends all traffic over the VPN. Remote Desktop from the Mac should still work fine. No need for adding a NIC.
