This has nothing to do with VoIP, but if one of your computers is old enough to have a (dial-up) modem, or if you have an old stand-alone modem in your attic, there are "answering machine" programs that can answer your POTS line and take a message. Some have the ability to send the messages by email, or you could write a script to check for new messages and email them off.
In addition to the SPA3102, other ATAs with FXO ports include the Obihai OBi110, the Grandstream HT-503 and the older SPA3000.
