torrent for a few
then Hulu for the latest episodes

Why does hulu only have a few episodes?

I found a european site that has all eight seasons. They have german subtitles but easily ignored. Once I catch up I'll dvr this show going forward.

You can thank the networks for that. I think it's sad that you can't stream the current season from Hulu or the network sites. Though they do place the shows up for sale/rent a day after they air. Fox doesn't stream anything for at least 7 to 9 days after it airs [or that is what they did a couple years ago].
IMO, it's their loss, that they want to maximize the profits from selling/renting the shows vs streaming them with ads. Hence why so many turn to torrents as a source for the TV shows, plus they are without ads.

I know if I could go to a network's web site and stream the shows, I'd cut the cord in less then a heart beat. I know I can torrent them, but I'd rather not.

Why won't HBO just let you pay them directly?

Because the cable companies would have a cow, and HBO's real customers aren't the viewers but the cable companies.
