[hard drive] Help with SSD drives

I am planning on getting a 256gb SSD drive but I need some questions answered before I buy. What does IOPs mean?
The middle one has this for max read and write
Max Sequential Read Up to 525 MB/s
Max Sequential Write Up to 500 MB/s
What does IOPs mean? Should I go with max speed or IOPs

IOPS stands for Input/Output Operations per Second. It's essentially the number of instructions that a given drive can handle in a second. I liken it to PPS (packets per second) on a switch or router; multiply the PPS by the average payload of each packet and you get a rough estimate of bandwidth.

I'm amazed at how fast these SSDs are. The other day I was move
some BIG files for MS FlightSimX from a Samsung 830 to a WD Raptor.
These files were taking 10-12 minutes on my old WD 300 gig drives
but only 90 seconds between these two!

I deal with tv programs. What used to take me 5 minutes now takes less then a minute.
