[WIN7] Windows 7 Install Question

I'm building a new Windows 7 64bit machine today & have ordered a Windows 7 Professional 64-Bit OEM Full installation DVD Disk which will take about a week to arrive.

My question:
I have a Windows 7 64bit Ultimate OEM install disk and was wondering if I could use that to install Windows 7 on my new build today ... and then input the Win 7 Professional key & activate it once it arrives in the mail?

Would that effectively "downgrade" the Ultimate install to the desired legal "Professional" install?

No problem. Oddly enough, to get the same capability with a Win 8 DVD, you put the ei.cfg file back in.

One of the best things with a Win 7 install.
Delete one file and rebuild anything you want.

Within reason of course of the platform, x64 etc.
